The variety is rare, and the care behind it is unmistakable.\u003c\/div\u003e\n\u003cdiv\u003eAfter harvest, the coffee is brought to a local washing station owned by Mesfin Girma. There, it undergoes \u003cstrong\u003edry fermentation for 120 hours\u003c\/strong\u003e, then dries slowly on raised beds for \u003cstrong\u003e12 days\u003c\/strong\u003e—turned often, never rushed. Locals call this method \"wine processed\" because of the rich, almost ferment-forward profile it creates.
