That has been our mission since the very beginning. Edison is a family-run coffee company, and this is the story of how a college coffee-shop job grew into our life’s work.

How we got here

2004–2012

Exploration and dreaming

Edison Coffee Co. began long before the name existed.

In 2004 and 2005, our earliest coffee days were shaped by a single coffee shop in College Station and a mentor who helped us see coffee as more than a product. We were learning the mechanics of coffee, food service, and business, but more than anything, we were discovering the beauty of hospitality. We saw how a cup of coffee could create space for people to feel welcome, seen, known, and cared for. Those early years quietly formed so much of what would later become Edison: community, curiosity, good work, and meaningful experiences around food and drink.

2013

Opening cafe doors

In 2013, that dream became more tangible when we opened our first shop in Highland Village. It was our first leap into ownership and a season that taught us the power of local presence, team culture, and shared experiences over coffee. We learned a lot by doing, sometimes the hard way, and started to understand that building a business was never just about what we served. It was about who we were becoming and who we were building it with.

2016

Launching the roastery

By 2016, as we stepped more fully into the Edison name, our curiosity had also pulled us deeper into coffee itself. We had always loved serving coffee, but roasting opened up a whole new layer of discovery: the producers behind each coffee, the way processing shapes flavor, the decisions that happen at the roaster, and the small adjustments that can bring a coffee to life. What started as genuine passion and a desire to keep learning slowly became a bigger part of who we were. Roasting gave us a way to explore more, create more, and connect people more directly to the stories behind the coffees they were drinking.

2018

Establishing identity

Over the years, that spirit of curiosity became part of how Edison moved through everything. We learned how to be resourceful, creative, and scrappy in the best ways: rebuilding espresso machines, troubleshooting roasters, creating seasonal menus, dreaming up thoughtful experiences, and finding beauty in the details most people never see. Whether we were designing a drink menu, repairing equipment, training a barista, or figuring out how to serve people better, Edison kept teaching us to stay curious, solve problems, and keep making things with care.

Our story has taken turns we never could have planned. We closed our original Highland Village shop in 2018, built a larger café, bakery, training lab, roastery, and meeting space in Parker Square, hosted community and industry events, and grew our wholesale partnerships. We also walked through real disruption: a car crash that changed our café space, a global pandemic that forced us to pivot overnight, and a fire that eventually moved us out of Parker Square and into a new season as a roastery.

Through each chapter, we kept learning the same lesson: Edison’s mission was never tied to one building. It lives in the people, the relationships, the work, and the purpose behind it all.

2022 – today

Edison today

Today, Edison is a specialty coffee roastery serving retail customers, wholesale partners, cafés, churches, restaurants, offices, and coffee lovers across the country. We roast with care, source with intention, train and support our partners, and continue building a company rooted in our values: fun, generosity, thoughtfulness, and authenticity.

We are still explorers. Still learning. Still creating. Still finding ways to be resourceful and imaginative with what’s in front of us. And we still believe coffee can be a small but meaningful way to help people feel a little more connected.

A letter from Mel & J

Our journey sparked back in college (Texas A&M, Whoop!) when we worked together at a local coffee shop. Getting to help build an environment and create experiences around such a fun beverage birthed a crazy dream in us. We founded Edison in a continued pursuit of that dream.

Edison is not only ingrained in our family name — it’s in our desire to explore, create, have fun, and grow together with coffee and people. It is our hope to use this business as a vessel to build up, cultivate, and inspire.
