At Edison, we have continually sought out exciting new discoveries in order to share all of the creativity found within coffee. Now, we ask you, why should caffeinated coffee have all of the fun?
We understand the health-oriented preferences that come with the caffeine-rich hobby that is experiencing coffee. For that reason, we’re proud to announce our latest decaf release, a single-origin all the way from Ethiopia. We believe that this startling coffee successfully offers a rich decaf experience without compromising on the flavors inherent in a washed Ethiopian. A pleasant baked pastry note is complemented by berry flavors, and curbed with a citrus acidity and smooth mouthfeel. This is one of the most complex decafs we’ve had the privilege to try!
This unique decaf process finds its distinction in a solvent called Methylene Chloride (MC). To begin, the coffee is submerged in hot water, which extracts many of the coffee's solubles, including the caffeine. After the coffee is removed from the water, Methylene Chloride is introduced into the solution. This solvent is not very miscible, meaning that it can easily be separated from the water. First, however, the caffeine molecules now separate from the coffee bond to the MC, which is finally removed from the solution. Afterwards, the coffee is reintroduced into the hot water so that it can absorb its soluble compounds.
