Although many decaffeination processes require safe chemical solutions to extract the caffeine from the coffee, this one is unique. Throughout the process, a coffee’s caffeine content is slowly “washed away” by a solution of water and green coffee solubles. In other words, the decaffeinated coffee is the result of two simple forces: green coffee and water.
