Muxbal — meaning “place surrounded by clouds” in Mayan — is a mountaintop estate in Chiapas, perched at 1560 meters just below the Tacaná volcano near the Guatemala border. It’s coffee grown at the edge of the sky, where altitude, ecology, and precision meet. Here, elevation isn’t just a feature — it’s the foundation. Cooler temperatures and slower cherry development concentrate sugars and structure, bringing clarity and complexity to the cup.
Of its 236 hectares, only half are planted in coffee. The rest is a protected ecological reserve of rainforest, rivers, and springs — a commitment to biodiversity certified by the Rainforest Alliance since 2006. Processing at this height is no small feat, but the Muxbal team meets it with a craftsman's eye. Every aspect of the estate — from land use to flavor development — reflects a deep commitment to craft, care, and the long view.
