There’s something special about this coffee—something you feel as much as you taste. Grown by smallholder farmers near the town of Chito in Ethiopia’s Gedeo Zone, these heirloom Wush Wush trees thrive at elevations between 1,800 and 2,150 meters above sea level. The variety is rare, and the care behind it is unmistakable.

After harvest, the coffee is brought to a local washing station owned by Mesfin Girma. There, it undergoes dry fermentation for 120 hours, then dries slowly on raised beds for 12 days—turned often, never rushed. Locals call this method "wine processed" because of the rich, almost ferment-forward profile it creates. It’s a labor-intensive approach, and it’s one of the reasons this cup is so expressive.

When we cupped this coffee, the flavors jumped out immediately—Watermelon Sour Patch Kids, fruit bomb, jasmine florals, and a clean, sweet finish that made us all stop and smile. But what really stuck with us was the clarity of intention behind every step. From the farmers who steward the land, to Mesfin’s precision at the washing station, this is a coffee that reflects deep craft and care.
