With heart, dedication, and a relentless commitment to excellence, this husband-and-wife team has transformed their coffee into something truly extraordinary.
From the farm to the mill, every step in Antonio’s process reflects his deep care for the craft. His mill, set at 1200 meters—just a bit lower than the farm itself—offers the perfect environment for drying naturals. Warmer days and stronger sun at this altitude make it ideal, and this year, cooler weather only emphasized the mill’s importance in achieving perfect drying conditions.
Only the ripest cherries make it into this lot. Each one is handpicked and placed in clean, sealed bags to rest in the shade, where fermentation begins. Antonio, with years of experience under his belt, carefully monitors this stage, ensuring the cherries ferment overnight—never exceeding 14 hours. The next morning, the process continues with meticulous precision.
The cherries are washed in fresh water to remove dust, debris, and any floaters (immature beans), a step that balances their temperature and curbs microbial activity. Afterward, they’re spread out on raised beds to dry naturally over 20 days, with Antonio’s team turning them four times a day to ensure even drying. Once they’re ready, the cherries head to the family’s dry mill in Fraijanes, where every detail is monitored to perfection before sorting, bagging, and preparing for export.
The result? A coffee bursting with notes of honey, raspberry, and delicate florals. It’s a reflection of Antonio and Eby’s hard work, their commitment to sustainability, and their deep connection to community. With every sip, you taste their story—a story of passion, progress, and heart.
But Antonio’s vision doesn’t stop here. He’s committed to advancing sustainable farming practices and supporting his local community. One of his dreams is to make farm supplies more accessible for other producers in the region, empowering them to invest in their own futures. “Together, we take care of the environment to avoid contamination,” Antonio and Eby explain. Producing honeys and naturals isn’t just a path to better coffee for them—it’s a way to create opportunities, improve wages for workers, and provide for their children’s education.
